Here’s a recipe for Eid dessert Kulfi Trifle:

Ingredients:

For Kulfi:

  • 2 cups full-fat milk
  • 1/2 cup sweetened condensed milk
  • 1/4 cup sugar (adjust according to taste)
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • 1/4 cup chopped nuts (pistachios, almonds, cashews)
  • Corn flour 1 tbsp.

For Trifle Assembly:

  • 1-2 cups cubed sponge cake
  • 1 cup chopped mixed fruits (mangoes, strawberries, pineapple)
  • 1 cup whipped cream or vanilla custard
  • Chopped nuts for garnish
  • Rose petals for garnish (optional)

Instructions:

  1. In a heavy-bottomed saucepan, heat the full-fat milk over medium heat. Bring it to a boil, then reduce the heat to low and let it simmer, stirring frequently, until it reduces to about half its volume. This will take approximately 20-25 minutes.
  2. Once the milk has reduced, add the sweetened condensed milk, sugar, cardamom powder, and saffron strands (if using). Mix well and continue to cook for another 5-7 minutes until the mixture thickens slightly.
  3.  In corn flour, add milk & mix well.

-Now add dissolved corn flour in milk, mix well & cook until it thickens (1-2 minutes).

-Add khoya, mix well & cook on low flame for 2-3 minutes.

  4. Remove the mixture from heat and let it cool to room temperature. Once cooled, stir in the chopped nuts.
  5. Pour the kulfi mixture into popsicle molds or any other container of your choice. Insert sticks into the molds and freeze for at least 6 hours or until set.
  6. Once the kulfi is frozen, remove it from the molds and chop it into small pieces.
  7. To assemble the trifle, layer cubed sponge cake at the bottom of a serving dish.
  8. Next, layer chopped mixed fruits over the cake layer.
  9. Spread a layer of whipped cream or vanilla custard over the fruits.
  10. Add a layer of chopped kulfi over the cream or custard layer.
  11. Repeat the layers until you reach the top of the dish, finishing with a layer of whipped cream or custard.
  12. Garnish the trifle with chopped nuts and rose petals (if using).
  13. Chill the trifle in the refrigerator for at least 1-2 hours before serving.
  14. Serve chilled and enjoy your delicious Eid dessert Kulfi Trifle!
